You don't have to be muscular in order to become an expert martial artist.
They were walking like 50 km a day during marches and eating bunch of grains and the occasional meat and blood broth.
When they were at home they were tending their animals, farms and abusing their slaves.
So its easy to assume they looked like any manual laborer, if not a bit chubby when they were not in campaign.
It's ridiculous to assume they would be able to maintain a today's bodybuilder body when they were on the field living of the land and occasionally starving for months.
