For me? It's this. It just works! Also I use my cellphone instance as a "cloud" so I don't need to have both my computers powered on to sync.

Can someone explain to me what the point of Syncthing is when rsync exists?

Used NextCloud for months. It was bloated inefficient garbage. Syncing was buggy as shit and had constant issues. I set up Syncthing once and completely forgot about it. Shit just works. It syncs to my home server and I just toggle on WireGuard and use SMB to access my files remotely if I ever need to. If I really wanted some sort of UI I could install Filebrowser docker or something. I also use Rclone CLI to backup anything to BackBlaze B2. IMO there's no good sync + browse software. So get a good sync software.
