hmm as a test, i suppose convincing someone else that you are sentient could work, however in order for it to work well, the same definition of sentience must be held by both the tester and the person being observed

sentience to me is less about intelligence, or the ability to memorize and apply information about the environment, and more about self awareness, so you could have a sentient organism which is not intelligent enough to realize it is sentient, but is still intelligent enough or perhaps instinctual enough to survive and propagate as all life.

so basically a sentient being can feel and react to its environment, so basically any system of sensors and responses can exhibit sentient behavior within some limit of complexity
