I think I fucked up by boiling the water because it condensed once I sealed the jars. I'll try again but let it cool down before mixing the water.

Go with the Uncle Ben's tek. The rice is already sterilized and once you heat it up it further sterilizes it.
Then (when it's cooled off) all you do is inject spores through the plastic gusset on the bottom.
Costs a few bucks and is difficult to fuck up.

Turn your central air fan off and try to keep the air as still as possible for like an hour to help airborne mold spores settle out of the air.

Back when I did them I did it in a small closet, and I doused the air with lysol spray and kept really still for a while before inoculation. I think it helped

It looks too fuzzy too. When in doubt, toss it. It happens. You said you boiled them, not pressure cooking? 15 psi for 90 minutes is kind of the agreed standard.

I never had luck with uncle Ben's... Maybe I'm retarded. I use wild bird seed. I simmer it and let it soak overnight. The. I rinse it and put it into the jars. Rusty lids can also cause problems. I invested in some stainless lids and I have had less failures. My nemesis is the blue mold.
