Are they? I live in a pretty high latina area. Don't feel like I see a lot of white-latina couples. Some but not that common.
Problem is latinas balloon usually starting in their late 20s. latino men don't seem to mind but white guys do.

it's hard. Just being from the west coast puts you at a disadvantage. I've usually met that type through church, or if you're not into that, try animal-related hobbies (except horses, those girls are fucking nuts). Animal rescues especially tend to have really down to earth girls that would be hard to meet otherwise.

It's kind of a crapshoot though (lots of the people meeting this description are only down to earth because they are so fat they are drawn to it) and the places that do have girls like that generally don't have jobs that would justify moving cross country to get. If you can get a job in a smaller city like huntsville alabama and commute in you have a shot.
