english used to be the predominant culture in north america, which were largely protestant.
irish are catholic and had historical issues with england and englishmen as a whole, so ofc they were treated as second class citizens in the new world.
they were considered dirty papists, terrorists trying to undermine english authority, were always nagging about injustices and were coming to america by the boatload after large famines in ireland.
they lived in squalor and had a language that was difficult to understand at times

Because "white" at one point was really more of a cultural thing than a racial one. Once upon a time when the world still ran on ethnonational states, ethnicity and race were synonymous, so there was no "white" so much as there were British, and Irish, and German, and French and so on. It wasn't until the arrival of Europeans in North America that the concept of "Whiteness" became a thing, because the newly-formed United States wasn't an ethnonationalist state in the same way European kingdoms were, and thus was a melting-pot of various European peoples Germans, French, British, all lived in the same country now, so "white" was just a blanket label created to distinguish them from Native Americans and black slaves. The reason Irish wasn't considerws white is more about gatekeeping than skin color.
