Default on most devices nowadays is a custom one from the device vendor, loaded with spyware. I know on Pixel phones it's GBoard which is spooky, and Samsung uses their own too.

Florisboard is alright. I like having a full keyboard with numbers on top without having to hit a key to switch. Its spell checker is a bit wonky though.
