Are there any legal nerds here which can help me figure out whether or not the vaccine requirements are regulated by this health emergency? If so, will I be able to enter Brazil unvaccinated after May 22nd?

Brazilian here. You probably will still have to be vaccinated. Look up the airport you'll be landing on (it'll probably be GRU), give them a call and ask them just to be sure. Or call the Brazilian embassy and ask them.
