Stable Debian 11 is 5.10, but you can use 5.18 or whatever on Debian stable just fine.
Just download Stable 11 and use a backported kernel. I personally run 5.16 because of Futex2 + the Switch Pro controller driver, and it's ultra stable and cozy.
