Because they're made by you and me. There's no open source dev with 500 employees working on a single piece of OSS.

Shotcut is good. OpenShot is also good. Kdenlive is good. If you're doing production work you're going to be using professional tools and a rendering farm anyway. That's not what most video editors for any platform are designed to do. For home, hobbyist, and even low-level professional use? These are fine.

OpenShot is pretty nice for basic non-linear editing. But this guy truly knows his shit:

Blender's video editing is okay but it's nowhere near the best.

the only good 'industry' software that's open source is blender

Blender 3.2 and 3.3 video editor have been getting insane UX improvements. 3.3 has object tracking.
