This is the second time I've seen you do crock pot ribs. Have you ever tried foil wrapped ribs in the oven?

I don't like them on the grill. Smoker yes but not necessarily the grill.

Anyway it's very simple.
Apply rub
Lightly brush bbq sauce on the ribs
Tightly wrap in foil
250 degrees for 2-3 hours. When I'm cooking BBQ meats I cook to temp and not time so I cook them to 200-205 degrees internal
Finish on grill or broiler for crust.

They're so tender you can literally pull the bones out with no resistance whatsoever
