I installed nixos on a vm to try it out and I'm not liking it so far.
I'm having trouble installing node... I'm not even going to make the effort desu.

You're making a fatal mistake because you're so used to shitty methods of installing software. You're trying to get Node. Why? Because it's a dependency of your project. If so, why are you trying to make it a dependency of your OS? It fundamentally doesn't belong there. Use a nix-shell. This binds your project's dependencies to the project itself. The added benefit of this is that contributors to your project don't need to set up their OS to mirror yours. They simply enter the nix-shell.

Sounds like a legit use to install it globally. Although, installing it just for your user via Home Manager might be better. But that's not important if you are the only one using the computer.

If it's the same version etc. nix-shell will re-use the same binary.

You can install stuff systemwide and not to a specific project afaik.
