American cheese is pasteurized milk/cheese that melts into an actual sauce almost when heated, unlike cheddar. most restaurant burgers will use this kind of cheese instead of actual cheddar, and that is because it is literally the best possible cheese for a burger.

It's not even milk based it's oil based. It's disgusting but it is a lot cheaper so most restaurants will use it because most of their customers have no taste at least not outside of Wisconsin.

The other reason its commonly used is because it has a much milder taste compared to cheddar so you really taste the beef a lot more

They don't have a whole lot of cattle in Ireland and what they do have tastes terrible.

If you can, try experimenting with other meats when you make your burgers. Other cheeses too. Try making your own buns if you have the time (it is very time consuming, so really in my opinion not worth it) but at least brush them with garlic butter, try bison, venison, beef, and lamb, and every kind of cheese like making the patties with bleu cheese and or bacon packed in to them. Burgers can be so much better than just the trash you get from MCD's
