Real cheese. Velveeta is good but it can't do all the work by itself. Add in some fresh grated cheddar or jack and then some milk.

Always have a roasted chicken in your fridge, goes great on mac. Then use the rest for sammiches and boil the carcass with veg to make stock for risotto/soup
