Hes probably just using clang, firefox compiles pretty quickly with clang, on my ryzen 7 2700 takes about 40 minutes.

building chromium the browser doesn't build every project related to the chromium brand
like if i bust open a chromium installation i'm not going to find a whole chromeos gentoo installation in there

Linux is a kernel which, while complex, serves a single function.
Chromium has to be an HTML/CSS renderer, a JavaScript compiler, a graphical framework, a virtual machine, a PDF reader/editor, a file manager, etc.
Compiling Chromium is only a few steps removed from compiling your entire operating system all at once.
