Because I'm too lazy to make a GUI, it takes up far fewer resources, is quicker both in terms of processing and use, it's trivial to automate most things.
There's a time and a place for it. For sysadmin things, or low-resource environments, for example, it's great. But nobody expects you to be able to edit a video or an image or produce music using the CLI. And the typical computer user barely even uses anything but a browser and document processing tools anyway, so they don't really have any reason to use the CLI.
