M8, Gnome is not for everyone. Gnome is for people who want a "functional" desktop with basic programs that look good, and absolute no distractions.
If you like ricing, go to KDE, XFCE, what ever.
But for the love or god don't try to make gnome be other DE just because you like that way. GNOME is the most popular linux distro because it works well and offer a good "experience", nothing more.

I always dig minimalism, as a matter of fact, during a long time I was a user of fluxbox, there is plenty of alternatives for people (except the shit that linux mint uses, that is just a discount windows to please windows fanboys who want to larp as linux users on the weekend and ruin the experience of new linux users).
