Emacs vs VIm

I'm really thorn between Emacs and Vim, which one is more 'future-proof?'

Just use Doom-Emacs and you'll always be comfortable around vim. Don't fall for Emacs' default bindings.

on the other hand Vim bindings seems overcomplicated considering the layout of keyboards we use nowadays to the terminal machines the creator based it on.

I mean, there must be a reason Vim bindings are so popular right? are they REALLY that effective? even in vscode one of the most popular plugins is a Vim emulator...

Vim bindings are weird at first. And many people use the superficially. But there is so much power when you get deeper.
Consider the sequences:
ciw # change the current word
yiw # copy the current word
viw # mark the current word
diw # delete the current word

where i="in" and w="word". Seems weird, but hold on:
ci( # change inside parens
ci" # change inside quotes
ci[ # change inside braces

and so on. It's a very flexible language that allows you to edit very efficiently. It can be second nature but takes some effort.
There's tons more but you don't have to learn it all at once. Every now and then just explore a little.

vim is installed on every linux you have and will use so vim.

btw I prefer emacs

Both are a fucking text editor just use whatever the fuck you want
