It's just reinventing what Doug Engelbart invented in the early 60s with NLS, all those proprietary cloud-based knowledge markdown garbage do-all programs started one over-ambitious operating system demo that would later go on to inspire guis, keyboard chording, telepresence, video conferencing, collaborative editing, and hyperlinking, attempted multiple times in dumbed down forms with xanadu and later the world wide web.

His undoing and eventual downfall to irrelevance was having an absurdly hostile attitude toward making his do-all information system easier to use, he thought people should get smarter to understand the software, not the other way around.
It was one of his core management philosophies, the dude was the first "let me sell you a solution to a problem that doesn't exist" grifter, long before all those talking heads on youtube started promoting knowledge base software and "second brain mindmap" notetaking garbage.

yes. most of their output from their note-taking efforts is content for their "productivity" and "self improvement" businesses. once they've found the new app of the month they start out with videos and tutorials until they have enough interest to launch a "change your life with Obsidian" course or whatever and charge $1500 for it

Imagine you want to write a grocery list and spending all this time thinking about HOW you’re going to write this list. You try vim, then obsidian, you title your notes by date so you can sort all your grocery shops chronologically, you use tags and folders depending on what store you’re going to… All that nonsense, and now you’re fucking STARVING because you have no food in your fridge because you didn’t thing of the END: BUYING GROCERIES.

he is right. if you write a paper get a reference management tool like citavi or endnote. you can read papers or books in the software, highlight, tag and comment and then easily import with citations in your writing program.
if you are in a learning something new you won’t need a complex system. learn basic tools like mindmapping and other memory techniques
if you want to apply something to your life create a checklist and include these new activities in your life so you form a new habit

It can be useful if you're researching a topic, and need to know where you found certain pieces of information.
Also useful if you found a way to fix some problem on your computer that you might have to do again. Or you are in the middle of doing it, and need to track what you tried so far.
Or you are managing a project, and need to keep track of what was decided on what meeting and who's doing what.

As you can see, there are plenty of legitimate reasons to take notes. Now the NEETs of this forum (who never made any list in their lives besides which waifus they've wanked to) will tell you that it's not useful.
That being said, you can watch one video on obsidian (or whichever app you want to use) and probably get all the info that you need. No point in going down a rabbit hole here.
