I have had 4k, 1440p, 1080p, etc and honestly, I prefer 1080p.

Yes, I am :)
It's interesting that you've put the sidebar on the side. I am using a 32" display with a resolution of 3480 x 2160 and just realised how much better it is when your taskbar is on the side.
I like 2560x1440 because it is comfortable to view in a single straight instance, is crisper than 1920x1080 without demanding as much as higher resolutions, and is better supported than widescreen resolutions. That said, I haven't had the fortune of trying higher resolution displays (besides on my phone), or widescreens for that matter. I think it could be more immersive for some interactive media, but my res works well for the majority of associated multitasking needs. Personally, I'd rather keep this resolution but have a higher refresh rate display (only 60Hz currently) and perhaps a finer technology such as micro LED instead of IPS. There are many things that would be nice to have (such as a working GPU for my rig), but the current market and technological phases we are in now don't support that too well.
