Eat 1.4g/kg of protein a day, no compromise.
Lift till failure, don't go beyond, get back in the gym as soon as your recovered.
Form is in your mind, technique is going to bring you nowhere, mind muscle connection is. You will not always have a mirror to look into and you need to feel what the right position is for an exercise to work a specific part of the muscle.
Always, SQUEEZE first, LIFT later. Not the other way around of, LIFT FIRST, FEEL THE SQUEEZE later. The first one is mind muscle connection, second one is noobness.
Follow a full body workout that is predetermined with good volume for the first 3-6 months until you get better work conditioning allowing even higher volume, then split it up as needed.
For technique, watch pro BB's. Good examples are pumpers like Phil Heath that always do perfect form. THE POINT IS NOT TO EMULATE, it is to UNDERSTAND. Why do they do what they do? And no, it is not ROIDS, they know what they are doing.

I dont want to sound like a redditor, but 1.4g/kg is what is needed for natural lifters to maintain positive nitrogen balance with weight training. Plenty of studies back this up, and interestingly this is the LOWEST dose.

Recovery is better, gains are faster, and you feel less sluggish. Don't forget the RDA is 0.8g/kg, so strength athletes needing more is very rational.

Yea, you sound reasonable. I would vote for a trainer for you temporarily until you learn the moves well enough. You won't need or want a long term trainer once your confidence grows.

The only way you'll actually know is if you train with them. Just ask why he's making you do certain exercises or things a certain way if his reasoning is solid and he doesn't give answers like "just because" he probably knows what he's doing if he's in shape.
Ask him what recomping is.
If he can't explain this to you, or if he tells you it's impossible to lose weight and pack muscle...just move on.

I've already been to the gym with a friend of mine who is PT as his full-time job. He already gave me a routine to follow, but since I've moved out from France to Luxembourg, he won't be able to follow me.
I don't know if I can ask my new trainer to stick to the program my friend gave me, or if I should ask him for a routine as an experiment to see whether he is full of bullshit or not. I'm already more or less aware of how coherent a routine should be, my problem is my global weakness (both weights and executions) and my fear of the gym
