The heel can help with ankle mobility and adding additional emphasis on your quads but they're not necessary by any means

Yes, they're great for squatting. Not everyone needs the heel height (I specifically look for lower heel heights to avoid straining my knees during squats), but the stability of a flat hard-soled shoe is very helpful.
