The story is stupid. They could've just bombard the castle with artillery and save everyone the trouble.

The castle is stated in several points in the series to basically be its own magical living entity with a mind of its own. Given what magic is capable of in Castlevania I'm pretty sure neutralizing artillery shells would hardly be a challenge, in addition the castle's appearance can effectively change at will in part explaining why the layout from game to game changes but also likely meaning even if the castle did suffer damage it would just change form effectively erasing the damage.

That's probably the reason why the destruction of the castle was never an option in 1999 or even 2035 and why sealing the castle in the eclipse with magic was used.
