OK then, what's the best approach? I feel like I should be better equipped to deal with enemies in general, tons of options but I feel like yokai are sponges who deal tons of damage in 1-2 hits.

use sloth magic, it makes the game easy

Not all answers, just general tips, some systems tend to lead you in the wrong way, crafting and item drops tend to encourage hoarding sometimes.

Since this thing is a bit on the "soulslike" gameplay I see there are ways to unlock shortcuts but certain levels seem to not have many, am I supposed to learn how to run past enemies or just killing everything every time?

In time, I went for the cheap one first, maybe during winter sales.
I can do it more or less consistently but sometimes it even seems like I lose control for a few frames and then get hit, some stances have OK crowd control but not much hitstun.

Draining your enemy's ki will make them take significantly more damage, and they will not be able to poise out of your attacks (in other words, every hit you deal to them will stun them). Attacks from behind also deal bonus damage. Get behind them when they're out of ki and fuck them up.

You have to grind for the recipes.

High stance makes most Yokai trivial because you can break certain weakpoints(the glowing horns) to deal lots of ki damage to them.
Otherwise it's a lot of "don't get hit and be agressive as shit" which is something you'll have to learn on your own. It's very easy to just fall into the trap of wanting to be too passive and defensive against them.

Everyone in here is being a disingenuous nigger. The first like 10-15 hours of Nioh are garbage because you don't have any good movesets or skills unlocked. Swapping out gear you find for that 1% advantage is mostly a waste of time.

How to (actually) get good at Nioh :
1) Learn how to ki pulse.
2) Change stance to hit and break the horns of yokai so they drop like a bag of wet shit.
3) Specialize in something; that jack of all trades master of none shit is a huge cope.

Yeah, they certainly improved upon the starting move sets in the sequel. Moves that really feel like "why the fuck don't I already have this" are just there in Nioh 2.

Enemy knowledge is a better weapon that anything you can forge. Just familiarize yourself with each enemy and you'll be dancing around them like chumps.

You ignored the "a bit" part, it is mostly on certain mechanics but not full blown like Dark Souls, certainly more agile.
I am probably a bit too agressive in certain areas, other than that some kind of parry would have been useful.

As other anons said, focus on your stamina, if it's all out, retreat and wait for it to come back up. Drain enemy's stamina. Use omnyo magic. There's no exclusive "strength" or "magic" build like other souls-like games, it's basically a mix of both. For a first playthrough I would recommend the axe. Also, BLOCK with mid stance. Attack with mid stance and high stance. Run or dodge with low stance. I recommend blocking instead of dodging, but watch out for your stamina.
