Play through FF4, FF5, FF6 and FF7 after that and you WILL understand. The jump in quality, story and music was insane. 3D world with seemless integraded rendered cutscenes into ingame graphics with same rendered background from the cutscene. The risk Square took in development from 6 to 7 was enormous and yet executed almost perfectly.

This except I would look at it from the reverse perspective and say that VII succeeded entirely on "muh 3D rendering, muh cutting edge Square grafix" hype and using pre-rendered scenes in advertising. Then once all the normies had been baited the rest of the VII franchise relied on nostalgia.

Remake 6 (or any sprite era FF), but base the chara design on the sprite rather than Amano's artwork.

Mostly the graphics. It's not simply the switch to 3D. FF7 has far more interesting and varied environments (pic related). Additionally, FF7 has a more ambitious story with more memorable characters.

The visuals in FF6 are...extremely shitty. It looked like a fan project.
But more importantly, FF7 was the first 3D game in the series, on the new system. FF6 was popular, just not that popular.

You may laugh all you want at lego people from FF7, but even as low poly blocky approximations, they still had all those little animations, like stretching arms, shrugs, wavings, hugs, shit like that.
It adds A LOT to the perception of the characters.
FF6's sprites had none of those. It was all text. And if you played SNES version, it was nothing but text.

Because less people around the world got to play it and it wasn't nearly as groundbreaking at the time for tech. FFVII was many people's first Final Fantasy.
