late medieval armor was extremely difficult to penetrate, it would be like asking how many children you could take in a fight
the only chance would be for the peasants to knock the knight down and bash in his head with clubs, but who knows how many peasants would die in the process. Realistically it's more likely that the peasants would flee after the first dozen failed.
