From what little we've seen, most of those stats don't mean anything except for science nerds.
Gravity will affect jump distance, and atmosphere will determine if you can take your helmet off. Magnetosphere and water don't seem to have any impact, and type/temperature just determine the aesthetics of the planet. At one point in the demo the guy is walking around the surface of a planet at -199 degrees like it's no big deal.
There is one other facet to planets, which are "planet traits" but no information about those beyond the fact that they exist and are discovered by 100% surveying a planet.

A poor magnetosphere might mean more natural radiation zones.

Fallout had radiation mechanics. No reason why they couldn't just carry them over to here.

They may want to distance themselves thematically from Fallout, though the underlying environmental hazard aura mechanics would still be good.
One theory I've heard before is that magnetospheres could have an impact on electronics, though I don't know if they'd be willing to go that far.

It's going to be great for modding but I'm really worried about the vanilla experience. It looks to be fallout 4 with half the content removed.

I hope there is enough that they haven't shown yet, like robot building like in fo4 or drivable vehicles like in one of the leaks.

Base building and ship building will more than make up for that

Todd made an off-handed remark about 'looking at stats' at one point so there may be more to the character builds that we're not seeing yet, or it could just be health and stamina like Skyrim.
Robot building is half-confirmed, at least in customizing Vasco and populating settlements with small droids. As for special abilities like vats/shouts, they make reference to cybernetics and neuroamps, and have a skill card or two likely dedicated to them in the Physical section.
