The megapack has a list in it that describes the difficulty of them. Ang of the medium/easy ones should be beatable for someone who has beaten Mario 64, especially if you don't plan on 100%ing them. Sapphire is a good babby's first. There's really only one star in that entire game that was tricky enough that I looked up how someone got it.

It's really not as bad as people describe it. I think you can get every tribal in the areas that are accessible to your character in your initial run through and then the point of going back is to go to whole new areas of content. Yeah there's some backtracking to get to those new areas but it's not the repetitive egg hunting tedium people make it out to be.
