I still remember when Madworld got a lot of attention just because it was a violent game on the Wii.

The thing is, when you have a game like Elden Ring where from begining to end the tone is somber and hopeless, the dark implications of the plot are expected. So, for instance, when you meed Rogier and he ends up dying as he suggest you start working with Ranni, or when Alexander ends up dying realizing the impossibility of his dream of becoming a warrior despite being dark it's just the overall tone of the game.
Ironnically, that's why people like a lot the more positive sides of the story, one of them being Ranni herself having lighthearted banter with you during the end of her questline, or Tanith and her Snek daughter having a genuine relationship (that you also destroy). When the whole game is dark the light stands out more.

In Nintendo games, the opposite is true. The games are usually lighthearted with positive tones all around. So when you go through a whole game of cutsey and colorful kirby where everything is joyful and happy-go-lucky, facing a final boss that's an apocalyptic angel with bleeding eyes, it certainly becomes more memorable.

Everything they make now is 100x more sterile and family-friendly more than they already were. We will never have things like literal torture dungeons in Ocarina of Time and the whole of Majora's Mask from them again.

I'm a Nintendo fan, but I imagine it's referring to when people who look at slightly dark subtext and try to paint it as making the game or series DARK and NOT FOR KIDS, like Kirby fans do, as a major example.
