I am curious about the Animal Crossing popularity. Almost picked it up on Gamecube way back in the day, but it wasn't meant to be. What's the deal?

The appeal of Animal Crossing is multiplayer play. It's not fun single player and isn't meant to be. You collect stuff to either show off to your friends or trade with them. Your town has random events, visitors, etc. each day that other people can come over and participate in. There's a ton of these social dynamics built in. So it's only something you want to play if you have friends or family who play it, or you're gonna participate in some online community.

I would recommend waiting on Pikmin 3 until the price drops. It's a very fun game but it's also very short. Maybe like 10 hours for the average person. If you want to know the best switch games for adult men, I would recommend

Given the thousands of games on the thing saying I tried 4 and it's crap is just weird. It makes me wonder what genre of games you even like to dismiss so many and what research into the library have you done.
For me my lost played according to my Switch is Ender Lilies. I have a lot of indie style 2D games on my Switch, metroidvania's, shmups, beat em ups, top down adventures and so on. I have a few 1st parties, mostly platformers, DKC:TF is my favorite and 2nd most played game. Also got a fair number of FPS games, Doom 3 &2016, Crysis, Metro and Borderlands.
The biggest draw of the Switch to me is just playing portably. I far prefer sitting on my couch or in bed and playing on the handheld than on a television set. So for me Switch was a real game changer.
If you don't like playing it as a handheld and are also meh on 1st party games I can see how Switch would be underwhelming. I urge you to explore the library a bit more. Check out the website Deku Deals, it tracks Switch sales and has a hottest section for well reviewed games. You might find something.

The selling point of the switch has always been it's probability, and almost everything under the sun has been ported to it since it's currently the best selling console on the market.
Find a game you like playing, and buy it.
