Can we talk about just how badly designed this fight is? It's absolutely horrible and should not have been released as is.

We have. Multiple times. Since release. We all know the issues. Waterfowl dance does too much damage, health vamp is overtuned, no reliable stuns, etc etc.
The crux of the issue is that the game is too easy with spirit ashes and too hard without. Now I'm going to stop being an asshole and say that I hope they learn from this mistake in the DLC, if there is one, and restrict summons or find some other way of tuning the difficulty

True, but bosses in base Elden Ring are designed with spirit ashes in mind. So hopefully the dlc will have some bosses where ashes can't be used or are countered in some way. Then we can get some nice, classically difficult bosses.

These people bought the game. It's not like they hated it. They should be able to enjoy more of it somehow. It used to be that you got filtered on a quarter by quarter basis, and could quit at any time. But it seems like Soulfags relish in marketing to everyone, getting their support for the franchise, and yet filtering them on top of it. Absolute kiked to the max.

The AI isn't good enough at handling the split aggression. Even if its a basic summon that hardly deals any damage, it still throws out 50% of the bosses pressure. I purely see spirit summons as a way for people that don't enjoy the mechanics of the fight to still enjoy the other qualities in Elden Ring (Open World, Exploration, Lore, Making a build). There is nothing wrong with that, but the game is designed around 1 on 1 fights.
