Actually did the same thing yesterday though I played it the first time about 3 years ago.
Made me realize how weird the balance in this game is. I pretty much cheesed bosses like Ludwig, Maria or Kos in less than a minute but some random Amygdala or Bloodletting Beast in the Pthumeru dungeons took me several minutes to beat with maxed out weapons and gems and demanded me to be very careful.
If the game does get a pc port one day I'd definitely want to try out an arcane build though.

Yeah. If youre doing the chalice dungeons in one whole go it can overlevel you when doing the story bosses
felt like some fucked up easy mode
maybe they had to compensate with the large health pools on some bosses.
