I pirated Dragons Dogma: Dark Arisen a couple weeks ago, played it for about 10 minutes and I can say with certainty that it was the worst first 10 minutes of a game I have ever played

When your character is massively overtuned for the content balance will go to shit because rapid fire weak attacks that are usually completely nobbed by flat defense suddenly do a million damage. The relative balance of different skills and classes looks entirely different at different levels of ATK vs DEF. Which is a design problem because it leads to situations where you may only have 1 ability worth using at any given point.

Which is fine. It makes farming that son of a bitch all the easier when I can blast through him multiple times without much hassle.

The flat armor system is the best system of soft-gating content. It also creates the best feeling of "growth".
Yeah, it's harder to balance than lazy TES multipliers but even in a jank state, it feels much better.
Going above and beyond during post-game is just a nice bonus.

I just want to mention most of the strongest and most unique pawns are at level 10. They usually have stats over 1,000 on either magic or attack. Even at level 50 your arisen will still be weaker than those level 10 pawns. Also they tend to have full knowledge of every enemy, so all their attacks are always effective against everything, especially if they are a strider cus they have access to both close and long range attacks.
Why people do this? Probably to flex on new players.

No it isn't. There are endless ways of doing this which would not fuck up the relative balance of classes and skills. Even if you're determined to have batshit insane exponential defense that makes it impractical to fight things above your gear level you could easily do that in a way which doesn't leave 90% of your moveset pointless.

Give me 1 reason why changing the order of damage calculation so that DEF is subtracted from ATK before the motion value of the skill instead of after it wouldn't be a better design without mentioning Jackie Chan.
