STR basically always beats DEX irl unless martial arts training is involved, in which case (in a simple case) DEX beats STR because the entire point of karate, ju-jitsu etc etc is to allow small dudes to beat the shit out of goliath via technique. In the wild and street fights might makes right.

To a point yes. Real fights (without weapons) just devolve into grappling and that is pure strength based. The idea of most martial arts is to not allow hulk to grapple you and to drop them then run before they fuck your shit up.
