It's deceptively easy.
I got to Sundowner back in 2014 without ever parrying (I played like ass) and recently came back to it and learned to play properly. Did all bosses S rank no damage and now doing all S-ranks.

the combat is so half-assed the only recourse is to spam parry at everything, so you're in luck because the window for blocking with the parry is very generous
