Streamers opinions and their fan tastes is not popularity.
Popularity means that you're can like it even if you are outside of a group, which is not the case for video games that have a cult following a streamer.
Try inviting a random friend who is unbeknownst to gaming to a game which a streamer has propped up and they will simply not understand why anyone would play it.
The reason why you have the opinion that streamers decide what is popular is because you're in that streamers influence but you don't even realize it, which is a sad state to be in.

You give them too much credit. Look at assmongoloid and how it went with new world and FFXIV.
The former gained a surge in the players during launch, but just look at the absolute state of the game now.
The latter gained a bunch of new players during a wave of new players that already was happening at the time, most of which only play it when he is active.
Lost Ark mostly went the same and the genshin clone will surely wither and die if he and other streamers forget about it in a month
