The nexus website have this "collection" of mods if you want to start with the essential. Then you can go from there with the stuffs you want.

If you toss tappers onto them it pretty much makes the mushroom cave useless as you'll be able to pull mushrooms from the tapers daily.

You could also wait til fall on your first year and hope you get a mushroom tree. You then chop down all the normal ones and slap tree grow onto the saplings that pop up. After a month or two you have yourself a mushroom farm.
