It's like they took an old, historic Victorian mansion that had tons of unique design aspects and charm and gutted it to then turn it into a cookie-cutter, modern contemporary looking house from this decade.

Imo the biggest red-flag is Boletaria being in ruin with a century of vegetation and disrepair spread throughout it.
The colorless fog timeline is rather vague, with most of the game pointing to it being a very recent issue. It's a few years at the absolute most yet the remake makes it appear as if this has been a problem for at least several centuries. They only did this for an excuse to add more color. This is in complete disregard to any lore for what is the most central area of the entire game. If they can't get this right, why the hell would anything else even matter?
They also made the "Valley of Defilement" into a cave...Instead of a valley...
Speaking of red flags, Latria originally had many yellow flags, pointing to the Old Monk and his yellow robes. The remake changed them to red to make them contrast more against the green tone they also spread throughout the scene.
The monster redesigns are atrocious but the entire tone of the game is altered by the compulsion to do fucking ANYTHING other than replicate the original scenery.

The atmosphere in the original is only exacerbated because the primitive graphics. The same way N64 games have this off putting feeling of being out in a void or a kind of backrooms feel. Even still the atmosphere can only carry the game so far, at the end of day the gameplay is what matters most. No one played demons souls because the atmosphere they played it because it was the only souls game in existence.
