Geese is an all-time classic with a sick theme, and Amakusa was a great final boss in Samurai Spirits. Rugal is on a league on his own.
But my all time favorite will always be Krauser. He's basically SNK's Haggar, has some great English lines, and most of all, his stage is perfect: inside his castle at night while a storm brews outside and an orchestra plays Mozart's fucking Dies Irae. This is the definition of awesome.
