Can i make a Mario game with Godot? And how complicated is it.

I see indie games with PS1 graphic style but how do I make a game with PS2 number of polygons/lighting etc whatever brings that graphical feeling? Particularly like FFX, FFX-2 and KH2

what do you mean how? Just grab references for what you want and do it. Lighting in PS2 era was pretty simple or just baked so it's mostly modelling and specially good texture work what matters.
