I don't know why people always say Undertale was a 1-man game. Temmie Chang did so much for that game. People like to ignore her for some reason.

Hylics 1 was made entirely by Mason Lindroth. I also want to say Hylics 2, he made everything except he had help from one other guy with the music so it kinds doesn't count.
It's actually a team of 3-4 people working on it last I checked.

People don't know about Temmie but I think Deltarune made her contributions much more apparent.

Well that's good that she's getting recognized more. She still did a lot for Undertale. She was the logo designer, cutscene artist, overworld artist, animator, shop and tile artist. She's also responsible for many of the character designs. Those are huge contributions. I guess Undertale is the worst answer for the OP question because of how wrong it is.

Definitely not one guy. Aside from the engine (Game Maker), the soundtrack is outsourced, along with the voice actors and translations and so on. Not to put down Remar's work at all, the sheer autism (the good kind) that went into making the game and all the hassles he had with it that every time he says he's done for good he drops another patch a few years later is amazing and it's one of my favorite games period, but it isn't a 1-man game.
