Because zoomies would poop themselves and throw it at the devs en masse if you had complex, randomly generated dungeons in AAA games. It all has to be hand-crafted A to B corridor and cave systems with maybe one side tunnel that connects them to give players "choice" and make it "non-linear", and also a dynamic marker that guides you straight to the end of the dungeon, with an unlockable door to the outside right at the end so you can quickly leave.

This is some scumfuck shit, exploring this entire dungeon would take the entire day for me, it would be completely fine being half the size

Back when I was a child without a care in the world -- Daggerfall dungeons seemed fun and complex. Now, when I can only play for a few hours a weeks, Daggerfall dungeons are tedious slogs and I would prefer short but handcrafted locations from modern Bethesda.
