Flawlessly. I have my PC hooked up to my 27" Toshiba through that right now, feeding it 640x480 60hz through composite and getting clean visuals out of N64, PS1, SNES emulators etc.
Internal converter. It's really not complicated.

For Games that aren't heavy plot or have long stretches of time where I can play without having to watch much cutscenes, I usually watch a show in the background. I have a backlog of movies/shows that miles long and since I don't have unlimited time to chip at it, I usually use my free time to watch and play games. For the big shit that require my undivided attention, I watch/play by itself.

Aperture Grille did a test of these types of HDMI/DisplayPort to VGA/RCA connectors and he determined it was less than 1ms of added lag. Virtually imperceptible.
