too many other games to play, and playing should be fun, not work

There's nothing fun about going through every level you've already beaten again with guide to get all the collectibles or grinding every character to max level for no reason other than to get an achievement.

100%ing is for good games, games I respect

The first game I've tried 100%ing in nearly 2 decades was Symphony of the Night. When I found myself spending 10 minutes using a wolf to swim along the edges of an upside down lake in order to turn a block on a map from black to blue, I realized it wasn't worth it.

no game is absolutely perfect, for some reason the part of the game you dislike the most has a bunch of collectibles and whatnot

It's just a number. And assuming the game has a perfect 100% state, your save stops being unique the moment you reach it. Pointless.
I only achieve the goals I personally find worthwhile and stop at that.
