no car can turn super sharply at high speeds due to momentum and physical limitations. so you need to find angles where you can start turning and still make it without crashing. this applies irl aswell - the faster you go, the more difficult it is to turn your car in a bent road

Force them to take a defensive line or they get overtaken. Often the sheer pressure of having someone on your ass while you're trying to nail turns is enough to cause mistakes. It's a very demanding sport every little thing you do counts.
