What's the point of the Shura ending aside from the final boss being unique there's literally no other reason to go that route

That's exactly why user. To see the secret boss, to test yourself, because you've grown addicted to slaughter. Once you finish that ending and then play the full game including secret owl and the demon of hatred you can complete the Shura gauntlet and get the coolest outfit in the game. The option also helps solidify that sekiro is always extremely close to following the cursed path of hatred that orangutang ninja did that eventually turned him into the demon of hatred. The dialogue leading up to the choice is also very smart. Nobody trusts you because they know you might still work for owl, and Emma even says she learned how to use a sword to slay a demon, while ishin tells you he senses the hate behind your eyes and won't hesitate to cut you down.
It wasn't just a meaningless option. There's lots of supporting dialogue and buildup to the moment. Sure it's a short ending but it's still amazing how it was made
