Use this, it has a youtube downloader, lets you create subclips and zoom into parts of a video if you like. Not super easy to understand, but once you do, it's fairly straight forward.

Like, I got it to trim and crop my video alright and reduce the framerate from 60 to 30 but there's no option to target a file resolution and vp9 encoding takes for fucking ever. I've got no way to add command line before the encoding job

WebmForRetards does support VP9 already, you can keep using that, the other app just has more features but the downside is the bad UI, I'll agree with that.

The ffmpeg version its using is ancient and when I try to use -tile-columns 1 -row-mt 1 flags to speed up the vp9 conversion by 10x it just wont accept it in the cmd line

That's because not everyone runs the extension for sound, so that means less people will hear it, also creating the webms with sound takes some extra steps, that's already 2 big filters.
