There's nothing fun about that, you're just encourage to cheese those kinds of enemies. They don't even make sense with the rest of the game's design.

How is it cheesing? just block, use items, or use your magic. Or get good. Cheesing would be using the huge attack buff when low on HP and then using the hour glass to make dodging a breeze

if you are crying about being hit by them just get good at the fucking game
at that point you should have the dash dodge

Nah, I'm sick of this excuse. Poor design is poor design, plain and simple. Enemies that drain your max HP is a completely retarded idea, there's a good reason games don't do this. It's a complete slap in the face to anyone that was previously parrying enemies, now you got little choice but to cheese the shit out of it with magic. Tunic is horribly balanced in the 2nd half, the enemies become a pain whilst the final boss is a complete cakewalk, shit's ridiculous.

and no, I didn't play the game 5 times, those are created by the new game plus feature

Those glowing spider-like enemies are annoying as shit, they self multiply and deal the max-HP-lowering damage on contact, in addition to being in a very confined area when you first encounter them (and they rarely show up after that point). Those fuckers and that one gauntlet room stick out like a sore thumb to me for being far harder than anything else in the game, cheese is encouraged against shit like that.
