They've already ruined it by completely destroying the mystery of Sephiroth. The most compelling part of Sephiroth's character is that you don't fucking have cutscene conversations with him. All you see for most of the game is the carnage aftermath of him just casually annihilating people and things that are huge challenges for you.

Well they already had a fight against Sephiroth at end of part 1 and he lost that fight so why would they they not be able to kill it if he can?

That's true, but it still means this new Sephiroth has ruined any chance of replicating moments like this and conveying the same tone. Killing a giant snake isn't that impressive compared to what we already saw at the end of FFVII Remake. They can come up with interesting stuff for him to do, but if they just try to repeat the old story beats it won't work as well with him.

Once you get to the Temple of the Ancients he won't shut the fuck up about Cloud.
And that's not even half way into the game.
