If you beat Easy and still want to play more of the game, then move onto Normal for more content.
But otherwise, first playthrough, just Easy through it. If it has a difficulty selection, 98% of the time it just means wasting your time more with dumb adjustments

I like playing on normal because I want some challenge to keep me on my toes and engaged with the gameplay, but I mostly play for escapism so it doesn't need to be constant or too much.
I may raise the difficulty if I find normal too easy.
Just play at the difficulty that's suited for you.

the problem is a lot of games decide "hard" mode is just "make things stupidly tedius" mode.
You're supposed to play hard mode on games where they made the a new easier mode and called it "normal"

Playing on easy... depends on the game. Most games made after 2004 on easy are literally for the disabled. Normal is the way it usually is played and hard or hard+ is for people who just like the game. Playing any game the first time on hardest is always what attention seeking faggots or imbeciles do.
Unironically people who have never been challenged by a videogame don't understand the appeal of overcoming something that at first seemed almost impossible.
The reason Souls was such a success is because the developers were adamant you don't get an easy mode, which for many players was their first taste of anything genuinely challenging. Even other games deemed "hard" always had some kind of baby blanket mode so you could beat them - people genuinely did have to play an overmemed action RPG (that's not even particularly demanding, just punishing) to get a taste of what the core unique appeal of videogames is.
A lot of games get really boring on easy, but they also tend to get frustrating and feel like a complete waste of time on the ultra-hard difficulties, at least on first playthroughs.
